Side: 'See-in-the-Dark' Carrot and Raisin Salad

Serves: 4


  • 3 large carrots, grated
  • handful raisins or sultanas (unsulphured, if possible)
  • handful cashew nuts, coarsely chopped
  • handful pecan nuts, coarsely chopped
  • 1 tbsp sunflower seeds
  • 1 tbsp pumpkin seeds
  • 1/4 cup low fat vinaigrette dressing


  1. Mix all ingredients with enough basic dressing to moisten salad.
  2. Garnish with some extra nuts, seeds and raisins.
